1 pd. dried navy beans
3 cups water
1 bay leaf
3 cloves chopped garlic
2 large onions chopped
3 plum tomatoes chopped
1 1/2 tsp. dried oregano
1 1/2 tsp. dried thyme
salt/pepper to taste
Soak beans overnight in bowl covered with water. Drain and place in saucepan. Add all ingredients and cook on low-simmer for 1 1/2 - 2 hours.
