Have you ever wanted something extremely moist, yet light, that hits the spot for a dessert idea? Here is a recipe that is reasonably cheap, and with any luck, you may find a few staples in your food banks bag. I can tell you this, it won't last long in the refrigerator once it's made. This deliciously different tropical cake will become a favorite request in your household.
1 package of yellow cake mix
1 cup oil
11 oz. of mandarin oranges, undrained
4 eggs
Frosting:
1 large package of vanilla pudding
1 large can crushed pineapple, undrained
8 oz. Cool Whip
Using your mixer on high, mix the first four ingredients for five minutes. Then pour into two greased and floured 8" cake pans. Bake at 325 degrees for 45 min. Once layers are cool, mix pineapple and vanilla pudding. Fold in Cool Whip. Frost cake layers. Delicious, and easy!
