This is great to use up any ground meat and pork that was thrust in your food pantry bag. Most importantly it works well with any bread you've tossed into the freezer after such a trip.
Just toss day old bread in a bag and sprinkle with a tablespoon or two of water. Toss well, and microwave on high for 30 - 45 minutes to moisten again. No one will know it wasn't fresh to begin with!
1/2 cup tomato sauce
2 large eggs, lightly beaten
1/4 cup BBQ sauce
1 teaspoon Worcestershire sauce
1 small onion, chopped
1/3 cup crushed saltines or breadcrumbs
3/4 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon pepper
1 pounds ground beef
1 pound ground pork
1/2 pound American Cheese
1/2 cup BBQ sauce
3 tablespoons brown sugar
2 teaspoons mustard
Spray slow cooker with cooking spray.
In a large bowl, combine the first nine ingredients. Crumble beef and pork over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of slow cooker
In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°.
Carefully drain off juice and fat. Allow meatloaf to rest 30 min.
Slice and place onto favorite rolls with American cheese.
