Oh, my gosh, you are going to love the ease of this recipe. In fact, it can be put together in such little time, popped into the oven, and you can go about what it is you need to go "abouting". It turns out wonderful each time, full of flavor - a real finger licken' experience. Kids love it too, and with no actual frying time you can cut down on fat calories. Don't be afraid of the mayonaise, there is so little used, that calories just don't rank up. If you want, you can throw in some of my Oven Roasted Potatoes, and just heat up your favorite veggie. Dinner served!
2/3 cup mayonnaise4 leg quarters
1 1/2 cups Homemade Bread Crumbs
Salt and Pepper
Pam Spray
Cut legs into thighs and drumsticks. Sprinkle salt and pepper over chicken and set aside. Meanwhile, put mayonaise in a bowl. In another bowl put your Homemade Bread Crumbs. For each piece of chicken, spread on mayonaise with a pastry brush. Be sure to cover the entire chicken part. Dip into bread crumbs and place on a greased baking sheet. Set temperature at 390 degrees. Spray tops of chicken pieces with Pam spray. Bake in oven for 45 minutes. Yum!
