3 lbs. potatoes, peeled and cubed
1 - 1 1/4 cups milk
4 tab. butter
1 tsp. salt
(1) 8 oz. block of extra-sharp cheddar, shredded
Boil potatoes in pan covered with water until tender. Drain potatoes and add back to pot. Stir in 1 cup of milk, butter, salt, and cheese. Whip on high with beaters until light and fluffy adding more milk if necessary. Serve immediately.
