On this note, I wonder, why do we need bread with those heavy carbohydrate sides? Why not add diverse breads as single side choice? Then we can pile our plates with more fresh steamed veggies! This bread is a wonderful addition to your family table. It has more eggs than most recipes call for and adds additional cottage cheese, hence, higher protein content can be had!
1 package of frozen chopped broccoli 10 oz. thawed and drained
1 stick butter or margarine
1 med. onion chopped
6 oz. cottage cheese
1 box Jiffy Corn Muffin Mix
Add all ingredients to a bowl and mix well. Place in wrought iron skillet or bread pan. Drizzle honey over the top of bread. Bake at 400 for 30 min.
