traditional favorite. This one is quick to prepare and fed two hungry teenagers in less than 30 minutes. I was lucky to receive a sausage box from the local food pantry, and have dived portions appropriately to utilize in this recipe. With those frozen chicken breasts always on hand, you can prepare this with staples already in your cupboard on a rushed evening.
2 chicken breast
2 kielbasa style sausages (about 4 inches each)
1 1/2 cups Frozen Vegetable Blend
1 large can of spaghetti sauce
1 can of chicken noodle soup (noodles removed)
2 cloves of garlic
1 tsp. salt
1/2 tsp. pepper
3 Tab. cooking wine, amber colored (optional)
1 tsp. Italian Seasoning Blend
1 cup mozzarella cheese
2 tab. parmesan cheese
3/4 box of your favorite noodle (not spaghetti pasta)
In a large pot begin 2 quarts of water boiling with a tablespoon of salt. In a
large fry pan begin browning chicken and sausage. Add Frozen Vegetable Blend
and sauté until soft. Add sauce, contents of chicken broth, garlic, salt,
pepper, cooking wine, and seasoning blend. Cover and let cook 20 min. In the
meantime add pasta to water and cook al dente, drain. Once sauce is done, toss
with noodles, and top with grated mozzarella and parmesan cheese. Cover top and
let sit for 5 minutes to allow cheese to melt.
