Simple Waldorf Salad

The weather is finally beginning to ease up and bring a bit of spring sunshine to the air.  Now's the time to grab some fresh pic-kin's and add a dash of fresh flavors to your table.  Give this one a try due to its easy slap together in a flash style.

  • 2 large Gala or Honeycrisp apples, unpeeled and chopped (about 3 cups)
  • 2 cups chopped celery
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts, toasted
  • 1/3 cup reduced-fat mayonnaise
  • 1/3 cup plain yogurt

Combine apples, celery, raisins and walnuts. Add mayonnaise and yogurt; toss to coat. Refrigerate, covered, until serving.

Kiwi Lettuce Salad

Kiwis are on sale! This deliciously light, refreshing salad will have  you coming back for more.  

Originally discovered in the Chang Kiang Valley of China, kiwifruit was considered a delicacy by the great Khans who relished its emerald green color and dazzling flavor. By the mid 1800s, the fruit had found its way into other countries which nicknamed it Chinese gooseberry, and it wasn't long before New Zealand growers were exporting the exotic fruit to specialized markets around the world.

5 cups torn lettuce
3 medium kiwifruit, peeled and sliced
1/4 cup chopped pecans or walnuts, toasted
2 tablespoons vanilla yogurt or sour cream
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon honey

Combine lettuce, kiwi and pecans. In a separate bowl, mix yogurt, lemon juice, oil and honey until smooth. Pour over salad and toss; serve immediately.

Creamy Cranberry Salad

It's that time of year again when we dig deep in our recipe files to come out with something spectacular for the table.  If you haven't given much thought to Thanksgiving, here is a delightful side dish that will win favors when placed at your table.

This creamy, light blend of fresh flavors will cleanse the palate in between loading your plate with second helpings of rich turkey gravy and mashed potatoes.

3 cups fresh or frozen cranberries (thawed), chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
1 container of Cool Whip
1/4 cup chopped walnuts

In a large bowl, mix the first six ingredients until blended. Refrigerate, covered, overnight.

Just before serving, fold Cool Whip and walnuts into cranberry mixture.

Overnight Layered Lettuce Salad

It's that time of  year when work parties begin bringing in summer fun.  If you need a dish to prepare that's economical give this one a try.

Best part of all is that you can prepare it the night before and just cover and tote it to work in the morning.  This is one of the most delicious, refreshing salads out there.

Check out Aldi and get the dried cranberries and real bacon bits for a little over a dollar.

1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
2 cups frozen peas (about 10 ounces)
1 cup mayonnaise
2 tablespoons sugar
1 cup (4 ounces) shredded cheddar cheese
1 small package of real bacon bits.
3/4 cup dried cranberries

In a 4-qt. or 13 x 9-in. glass dish, layer the first five ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover.

Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.
