Camping Recipes: Corn and Corn Fritters

These are delicious when out in the great outdoors.  Make extra and store in a Ziplock bag for an easy snack removal.  

​2 Cups Corn Bread Mix
½ Cup Water
½ Cup Canned Corn, Rinsed and Drained
2 Tablespoons Sugar
¼ Cup Cooking Oil

These tasty treats are good for breakfast, lunch, dinner, or just a snack. Add the Corn Bread Mix and the Sugar into a bowl and mix. Then slowly add the water and keep mixing. While you want constant mixing, you do not want to over-mix. Next, add the drained Canned Corn and give it one more mix.

The secret to making Fritters is to make sure the Cooking Oil is super hot when we start. Start off with a skillet and add a little bit of oil to cover the bottom, it'll probably be around one-fifth of the ¼ Cup of Cooking Oil. Ladle some of the batter into the oil and cook until crispy on the bottom side, about 3 minutes. Then flip and cook for another 3 minutes. Drain them on paper towels as you finish off the rest of the batter.

Camping Recipes: Bannock Bread

Here's a great family recipe that everyone can get involved in.  Nothing like the smell of fresh baked bread even if your camping!

Just premeasure dry ingredients in a Ziploc bag, and all you need to do is dump when its time to fry.


3 Cups Flour
2 Tablespoons Baking Powder
Dash of salt
3 Tablespoons Fat, either oil, lard, or butter
? Cup Warm Water (depends)

Bannock Bread is one of the most famous and easy camping recipes in the world. Some eat it as dessert, some eat it for breakfast, others share it as a snack. Either way it is a perfect microcosm for simple campfire cooking.

Making Bannock Bread is all about feel. The more you make it, the better you get. Start off by adding all the ingredients, except the water, in a bowl. Mix this with your fingers. You want the dough to feel crumbly, like breadcrumbs. Don't use the palm of your hand, instead just use your fingers; over-mixing produces gluten and that is bad.

Now is the time for the water. Slowly add some water and then mix with your fingers. You're looking for a dough that's soft and malleable. Odds are you will not need more than 2/3 cup of water, so stop there. Keep mixing the dough, with your fingers, until it holds together and seems sticky and bouncy at the same time.

For cooking you can add it to a skillet with a little bit of oil or butter and cook each side until it's nice and crispy. Or, for the kids, you can take some dough and wrap it around your perfect Marshmallow roasting stick and have them cook it over an open fire. Just make sure you work the dough so it sticks and doesn't fall while cooking.

BACON, BEEF, AND BEANS CASSEROLE

There is definitely something deeply satisfying about cooking over an open fire. The flavors, the smells, the sounds. All of it conjures up good memories of childhood camping trips and communing with nature. Campfire cooking can be just as fun and satisfying whether it’s for a week at a campground or for the day in your own backyard.

¾ Pound Bacon
¾ Pound Ground Beef
20 Ounces Canned Baked Beans
½ Cup Steak Sauce or Barbecue Sauce
1 Can of Biscuits

This tasty and filling dinner is just perfect for cold evenings. Grill up the bacon in a skillet at medium heat. Once done remove it from heat, drain, and chop. Now cook the ground beef until it is just done. Add the chopped bacon, baked beans, and sauce to the skillet. Stir this until it becomes well mixed and comes to a boil. Take it off of direct fire (think low to medium heat) and layer out the biscuits on top of the meat and bean mixture. Cover and cook for 10 minutes or until the biscuits are golden, brown, and delicious.

Camping Recipes: Quesadillas

Finding meals to cook over the campfire can be fun but also challenging. One of our camping dinner favorites is a hot and cheesy Camping Quesadilla. They’re easy to make and taste so yummy! Just put the quesadillas together, place on tin foil and cover them up, and place them on the grate right over your campfire. And just like that dinner is done!

All year round we like to make these quesadillas at home on our grill. Fun and easy dinner!


4 medium flour tortillas
2 8 oz chicken breasts, grilled and sliced
1 jar salsa con queso
1 can black beans rinsed and drained
1 c. shredded Mexican blend cheese
tin foil

Spread 1 Tbsp salsa con queso over one side of a tortilla.

Place 1/4 c. chicken on half the tortilla over the salsa con queso. Sprinkle 1/4 c. black beans and about 1/4 c. cheese over the chicken.

Fold other side of tortilla over to cover ingredients. Place on a piece of tin foil large enough to cover the quesadilla. Leave the ends open.

Place the foiled quesadilla on the grate directly over the campfire. Keep over fire to cheese is melted and tortilla is crispy.

Remove from the grate and cut in four pieces. No plates needed because you have the foil!

Camping Recipes: Dutch Oven Pizza

I am including all you off the grid campers who use the mighty cast iron series when you're out there in no man's land.  These recipes are hearty, easy to put together and a fulfilling treat when you sit down to dinner after a long day in the outdoors.

1 Pizza Crust
1 Can Tomato Sauce
1 Cup Cheddar Cheese
1 Cup Mozzarella Cheese
20 Slices of Pepperoni or Veggies

The dutch oven is a great and effective place to cook a pizza. Take out your pizza crust and place it in the bottom of your Dutch Oven. If you want to bring Pizza Dough, just let the Dough cook up for about 5 minutes before adding the rest of the ingredients to give yourself a nice base on which to build.

Next, layer out your tomato sauce. Try not to use too much, a little bit goes a long way. You can substitute the tomato sauce for things like buffalo sauce, barbecue sauce, or store bought pizza sauce.

Now Add the cheddar cheese. Spread it out so you have even coverage. I prefer to have my pepperonis not too crispy so I like to add them next. Make sure they are flat and that you have even coverage. Now add the Mozzarella.

Put your dutch oven onto the coals. Now place the lid on the oven and put five or six coals on top of the lid. This will cook the pizza from both sides so it should only take about 10 minutes.

Camping Recipes: Fried Fish Frenzy

We have been on camping trips with our poles and wondered what do do with the fillets once we cleaned them.  There had also been a time when we paid to catch farm-raised trout.  How delicious that was!  

This recipe came in handy both times.  There is nothing like a good ol' fashioned fish fry outdoors!

1 Pound Fish Fillets, One half pound per person, serves two
1 Cup Buttermilk Pancake Mix
1 Cup Beer
1 Cup Flour
​Cooking Oil


Take your fish fillets and dredge them in the flour for an even coating of flour all over the fish.

Mix the pancake mix and about ¾ cup of beer together. The rest of the beer is for you. Mix until it is smooth. Take floured fish fillets and dip them in the batter for an even coating.

Put these Fish Fillets into the oil and cook until the outside is golden brown. Once the outside is done the inside should be nice, moist, and shiny. Only cook two at a time as over crowding the pan when frying is not a good idea.

Let them drain a little bit on a paper towel. After that you can sprinkle a little dill, pepper, or lemon on them, but that's not really needed. They are pretty perfect just the way they are.

Camping Recipes: Grilled Sweet Potato Fries

Here's another awesome side dish to add to your meal this evening. Packed with loads of nutrients, this great tasting power-packed dish will add spark to your campfire cooking.  

Best of all it takes only a few moments to put it all together and set it on the grill.

​2 medium sweet potatoes
2 tablespoon vegetable oil
1 clove of garlic, chopped
1 teaspoon chili powder
1 packet of dry ranch mix

Wash the Sweet Potatoes and dry them. Then cut them in lengthwise strips, about 1/3 an inch wide on each side, so they look like fries. The important thing is that they are uniform so they can cook up at the same time. If you wanted to produce a crispier fry, and you have the time, soak the fries in water for 30 minutes and then let drain for an hour before continuing. If not, that's fine, they'll still be delicious.

Take all the ingredients and mix them in a bowl. We want an even coverage of all the tasty spices and the dry mix. Lay these fries out on a piece of tin foil that's over a sheet pan. Place the pan on a grate over an open fire or on the middle rack of a grill. We're looking to cook the potatoes and make the outsides nice and crispy. Depending on your heat you want about ten minutes a side, flipping once.

Camping Recipes: Caramelized Onions on the Grill

Luscious unexpected sides are a great way to gather everyone around the picnic table for some good conversation after a long day in the outdoors.

These are so sublime they just melt in your mouth.  Top them on grilled chicken, pork, or steak and you've got one fantastic meal. 

 
1 large Vidalia or sweet onion, peeled and cut into large wedges
2 tablespoons softened butter
1 teaspoon beef bouillon granules
garlic salt and pepper to taste 


Preheat an outdoor grill for medium heat.

Place the onion wedges on a sheet of heavy duty aluminum foil. Dot with butter, then sprinkle with bouillon, garlic salt, and pepper to taste. Fold the aluminum foil into a packet, leaving only a small hole at the top to allow steam to escape.

Place packet on preheated grill, and cook until the onions have softened, and cooked to a deep, rich brown, 45 minutes to 1 hour depending on the temperature of the grill. Stir the onions after the first 30 minutes, or as needed to keep from burning.

Camping Recipes: Baked Potato Filled Boats

Same old sides got you down when your on your last few camping days?  One is bound to get tired of the old baked beans, macaroni and cheese, and Rice a Roni side dishes that often grace our bins.  

Here's one that will add a little spark to your table once the usual sides lose their flare.  

3 Baked Potatoes
9 Strips of Bacon, cooked
Cooked Ham
Sharp Cheddar Cheese
Stick of Butter

This recipes uses a lot of leftovers and turns them into a great meal! Take 3 baked potatoes and cut them each 5 times. Do not cut them all the way through, we want 6 equally sized segments across the potato. In each Segment add a small piece of bacon, ham, and the cheese.
Lay each potato out on its own piece of tin foil. Put a little bit of butter on the tops of each potato and spread it around. Seal up the potato in the tin foil, find a hot spot in your grill or fire, and cook for about 20 minutes.

Camping Recipes: A Better Dog

For some reason, hot dogs are not relished as much on our camping trips at this point.  We are at 19 years camping, and that's a lot of years eating hot dogs.  ​

Needless to say, we are always looking for new quick, satisfying hot dog recipes.  Give this one a try the next time you're out in the great outdoors.  

This is a terrific twist on the old style kind of hot dog. These still have the same old Hot Dog flavor so kids will still love them, but now it comes with a few nice depths of flavor and sustenance so adults tend to like them, too.

8 Hot Dogs, Chopped
1 Small Onion, Chopped
8 Ounces Chili
3 Tablespoons Barbecue Sauce
12 Hot Dog Buns, gutted

Take all the ingredients, except the gutted hot dog buns, and mix it in a bowl.

Lay out each hot dog bun on its own sheet of tin foil. Fill the buns with the mixture and then wrap the tin foil so the whole thing is sealed. You can grill these over a flame for about 20 minutes. Or you can put them deep in coals and cook them for 15 minutes. Timing obviously depends on how much heat you have.
