The Best Quiche Lorraine

Hello, everyone! I've been a bit inundated recently with Mom's vascular dementia.  It has been a trying time and we've had to relocate her to Memory Care.  Hoping in the next few weeks to settle into writing some of my blogs again.  Prayers are welcomed!


Dough for single-crust deep-dish pie
1 package (12 ounces) thick-sliced bacon strips, coarsely chopped
3 large sweet onions, chopped
1 tablespoon minced fresh thyme
1/2 teaspoon coarsely ground pepper
1/8 teaspoon ground nutmeg
1-1/2 cups shredded Gruyere cheese
1/2 cup grated Parmesan cheese
8 large eggs, room temperature
2 cups whole milk
1 cup heavy whipping cream


On a lightly floured surface, roll dough to a 14-inch circle. Transfer to a 9-in. springform pan; press firmly against bottom and sides. Refrigerate while preparing filling.

In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan. Add onions to drippings; cook and stir over medium heat until caramelized, 20-25 minutes.

Stir in thyme, pepper and nutmeg; remove from the heat. Cool slightly. Stir in cheeses and reserved bacon; spoon into crust. Preheat oven to 350°. In a large bowl, whisk eggs, milk and cream until blended; pour over top. Place springform pan on a rimmed baking sheet.

Bake on a lower oven rack until a knife inserted near the center comes out clean, 75-85 minutes. Cool on a wire rack 15 minutes. Loosen sides from pan with a knife. Remove rim from pan.

Rhonda's Apple Butter

Try this homemade apple butter recipe. Made with apples and cinnamon. This apple butter has never been so tasty. Serve on toast or drizzled over dessert.

This freezes well.​

4 lbs apples
2 tsp cinnamon
1/2 tsp ground cloves

Peel, core and slice apples.

Place in slow cooker and cover. Cook on High 2 - 3 hours.

Reduce to low and cook 8 hours.

Apples should be a rich brown and be cooked down by half

Stir in spices

Cook on High 2 - 3 hours with lid off.

Stir until smooth

Pour into freezer containers and freeze or into sterilized jars and seal.

That is one of the things I love most about food – it has an amazing ability to bring people together and bring calm to the storm, if only for a moment.

I chose this recipe to share with you because it’s the perfect time of year for so many reasons.

On the tail end of apple harvest season, many people are looking for great apple recipes to capture their flavor during the peak of freshness. This recipe is also great for fall because it does a great job of warming you right up on a cold morning

4 medium apples
1/4 cup honey

1 tsp cinnamon
2 tab. melted coconut oil or butter
2 cups dry granola cereal (your favorite)


Place apples in slow cooker.

Combine remaining ingredients. sprinkle mixture over apples.

Cook on low 6-8 hours.

Homemade Waffles From a Pancake Mix

Heavenly and delicious, these can be made in a snap!  Grab out that old dusty waffle maker that you are just to busy to use any longer and make these fluffy, crispy waffles in minutes.

1 cup pancake mix
3/4 cup milk
1 egg
2 tablespoons oil


Grease and preheat your waffle iron.

Stir together pancake mix, milk, egg, and oil until you get a smooth and lump-free mixture. Let the batter rest for 4-5 minutes before you bake.

Pour the batter onto your waffle iron and close the lid.

Let the waffle cook until the steaming stops. Lift the lid and take out the waffle.

Repeat step 3 until you cook up all your batter.

Maple Bacon Walnut Coffee Cake

Here's a wonderful morning treat when you have a long, lazy weekend.  Simple, delicious, and satisfying this one will become a favorite.  

  • 2-1/2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/3 cup cold butter
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, room temperature
  • 1-1/2 cups buttermilk
  • 1/2 cup maple syrup
  • 1/3 cup unsweetened applesauce
  • 5 bacon strips, cooked and crumbled
  • 1/2 cup chopped walnuts

In a large bowl, combine the flour, brown sugar and salt. Cut in butter until crumbly. Set aside 1/2 cup for topping. Combine the baking powder, baking soda, cinnamon and nutmeg; stir into remaining flour mixture.

In a small bowl, whisk the eggs, buttermilk, syrup and applesauce until well blended. Gradually stir into flour mixture until combined.

Spread into a 13x9-in. baking pan coated with cooking spray. Sprinkle with reserved topping, then bacon and walnuts. Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool on a wire rack.

The Best French Toast

Here's a wonderful dish to make on a long weekend.  Labor Day is coming up.  Why not give it a whirl?


1-1/2 cups half-and-half cream
3 large egg yolks
3 tablespoons brown sugar
2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
8 slices day-old brioche bread (1 inch thick)
Optional toppings: Butter, maple syrup, fresh berries, whipped cream and confectioners' sugar


In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat.

Dip bread into egg mixture, letting it soak 5 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired.

Migas Breakfast Tacos

Unless you grew up in the Southwest or visit there often, you might be hearing of migas for the first time. Think of them as the best scrambled eggs ever. The secret ingredient: corn tortillas. They're what really make my migas tacos special!


1/4 cup finely chopped onion
1 jalapeno pepper, seeded and chopped, optional
1 tablespoon canola oil
2 corn tortillas (6 inches), cut into thin strips
4 large eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup crumbled queso fresco or shredded Monterey Jack cheese
1/4 cup chopped seeded tomato
6 flour tortillas (6 inches), warmed
Optional toppings: Refried beans, sliced avocado, sour cream and minced fresh cilantro


In a large skillet, saute onion and jalapeno in oil until tender. Add tortilla strips; cook 3 minutes longer. In a small bowl, whisk the eggs, salt and pepper. Add to skillet; cook and stir until almost set. Stir in cheese and tomato.

Serve in flour tortillas with toppings of your choice.

Pepperoni and Sausage Deep Dish Quiche

Although quiche is now a classic dish of French cuisine, quiche actually originated in Germany, in the medieval kingdom of Lothringen, under German rule, and which the French later renamed Lorraine. The word 'quiche' is from the German 'Kuchen', meaning cake.

  • 2 cups shredded mozzarella cheese, divided
  • 1 cup shredded sharp cheddar cheese
  • 4 large eggs
  • 4 ounces cream cheese, softened
  • 1/3 cup 2% milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 pound bulk Italian sausage
  • 1/2 cup pizza sauce
  • 1 cup chopped pepperoni
  • Fresh basil, optional

Preheat oven to 350°. Sprinkle 1 cup mozzarella and cheddar cheese in a greased 13x9-in. baking dish. In a small bowl, beat eggs, cream cheese, milk, Parmesan, garlic powder and Italian seasoning; pour into dish. Bake 30 minutes.

Meanwhile, in a small skillet, cook sausage over medium heat until no longer pink, 5-6 minutes, breaking into crumbles; drain. Spread pizza sauce over egg mixture; top with sausage, pepperoni and remaining 1 cup mozzarella cheese. Bake until golden brown and bubbly, 10-15 minutes longer. Let stand 5 minutes before serving. Top with fresh basil if desired.

Sausage and Cheese Frittata

If you're on a low carb kick, trying to fan out all those extra nasty carbohydrates in your diet, here is the perfect recipe to satisfy your hunger.

Made with fresh ingredients, you can toss together in a jiffy, this is the perfect breakfast to jump-start your morning.

1 (12-oz.) package reduced-fat ground pork sausage
8 large eggs
1/3 cup milk
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon butter
1 cup (4 oz.) shredded Cheddar cheese

Preheat oven to 350°. Brown sausage in a 10-inch ovenproof nonstick skillet over medium-high heat 10 minutes or until meat crumbles and is no longer pink; drain and transfer to a bowl. Wipe skillet clean.

Whisk together eggs and next 3 ingredients until well blended.

Melt butter in skillet over medium heat; remove from heat, and pour half of egg mixture into skillet. Sprinkle with cooked sausage and cheese. Top with remaining egg mixture.

Bake at 350° for 23 to 25 minutes or until set.

Sheet Pan Recipe: Egg In a Hole On a Bread

Here's a great recipe with Sunday just around the corner.  It's a quick and easy fix since you can line a sheet pan and pop it into an oven.  

Best of all, there's enough for everyone stopping by. 

6 slices bread, 1/2-inch thick
3 tablespoons unsalted butter, at room temperature
6 large eggs
6 tablespoons freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste

Preheat oven to 400 degrees F.

Lightly oil a baking sheet or coat with nonstick spray.

Using a 3-inch biscuit cutter, make a hole in the center of each bread slice.
Butter one side of the bread slices. Place the bread onto the prepared baking sheet, buttered side down.

Add eggs, gently cracking into each hole and keeping the yolk intact. Sprinkle with Parmesan and season with salt and pepper, to taste.

Place into oven and bake until the egg whites have set, about 12-15 minutes.

Serve immediately.
