Cream of Any Vegetable Soup

Part of being a frugal cook is the renoun ability to use up whatever leftovers are at hand.    This soup comes in handy when you have a container of unused vegetables waiting to be incorporated into something scrumptious.  Pair this with a lunch meat sandwich that is a concern of being used on time, and you've got a heartwarming dinner for only a few pennies!

1/4 cup butter
1 medium onion finely sliced
2 tbs. flour
1 quart of whole milk
1-2 tsp. salt (depending on taste)
1/2 tsp pepper
1 1/2 - 2 cups vegetable

Melt butter and fry onion until translucent.  Add flour stirring making a smooth roux.  Add milk, salt, and pepper and stir until soup begins to thicken and bubble.  Add your favorite leftover vegetable and cook for 5 more additional minutes or add some fresh varieties such as:

1 pd. asparagus - simmer 7 minutes
Broccoli chopped, 1 pd. - simmer 10 minutes
8-9 carrots shredded - simmer 10 minutes
1 medium head of cauliflower chopped - simmer 12 minutes
2 cups of sliced mushrooms - simmer 10 minutes

Magic Bars with Butter Crackers

Happy Christmas Eve!  I hope your day is full of joy and good tidings from those you love.   And, there is nothing better to show your love than making these last minute Magic Bars to share.

This recipe costs peanuts to make, and you may be quite surprised to find this tastes much better than the originals.  Looking for a new recipe that includes those boxes of buttery crackers from your local food pantry?  Then look no further!  I have just stumbled on a new treat that will become a family favorite.

1/2 cup butter or margarine melted
2 cups butter crackers crushed
1/2 tsp cinnamon
1/3 cup brown sugar

Mix well and press into a greased 13 x 9 inch pan

Pour over:
1 14 oz. can condensed milk

Sprinkle on:
2 cups semi sweet chips
1 1/2 cups coconut
1 cup chopped nuts (optional)

Press top lightly with fork.  Bake at 350 degrees for 25-30 minutes until coconut is lightly browned.

Simple Irish Cream

Holidays making you feel a bit overwhelmed today?  How about making yourself something quick and enjoyable that can be stored in your fridge for weeks?  This way, all you need to do is take a little snippet anytime those feelings of aloofness take their grip and hold on tight.

And, if for some reason your finances don't allow much gift giving, believe it or now you can make several pint size jars of this to give out to friends and family for Christmas.  By jaunting to Aldi you can get all these ingredients, except for whiskey, for pennies. What delightful gifts they make!

This recipe is at least 20 years old.  So, you can bet it is the best on the internet!

1 3/4 cup Irish whiskey
1 can condensed milk
1 cup cream or half and half
4 whole eggs (don't worry whiskey kills any bacteria)
1/2 tsp. almond extract
2 tsp. instant coffee
1/2 tsp. vanilla
2 tab. chocolate syrup

Put in blender and whip well.  Pour into containers and keep in refrigerator.  Enjoy!

Christmas Candy Cane Dough

I know there are a few little ones out there that you can share that Christmas spirit with  this season.  This recipe is good for any age and will prompt tidbits of conversation around the table while doing so.  It's simple due to the sheer fact all you need to do is roll ropes and twist them together making the beautiful color contrast.  Just look at these beauties on top of a mug of warm hot chocolate or laced decoratively on a Christmas serving platter.

This recipe comes from my good friend Maryanne who gathers all those delightful grandchildren around her holiday table to make these treats to bag and take home.  No matter the age, young or small, these treats turn out golorious each time because even a three year told can twist!

6 cups flour
2 tsp. baking powder
1 tsp. salt
1 cup water
1 cup sugar
4 eggs
1/2 tsp. red food coloring (or more if you want a rich color)

Beat oil and sugar together.  Add eggs then dry ingredients.  Split dough in half.  Using one have the dough stir/knead in food coloring.  Begin making ropes of each the same size.  Twist to make candy cane and shape.  Bake at 350 degrees for 8-10 minutes.

Sweet Moist Cornbread

One can't have too many cornbread recipes.  After all, where can you find such a versatile staple that cost pennies to make?  Corn meal is cheap and can be found in great colors and quantities in the baking section of your food store.  Nothing makes a more substantial side then taking some ground corn and making heavenly bread. 

This recipe is quick to whip up and bake.  If your short on dinner sides or your family is just plain sick of potatoes and noodles, give this recipe a try.

1 cup milk
4 oz. sour cream
1 egg
1 cup yellow corn meal
1 cup flour
1/2 cup sugar
1 tab. baking powder
1/2 tsp. salt
4 tab. melted butter or margarine
honey to drizzle

Place all ingredients in a bowl except honey.  Stir well, but do not over whip as it will make the bread dry.  Pour into 9 inch cake pan that is greased.  Drizzle honey over top to add extra tenderness and sweetness.  Bake at 350 for 30 minutes or until golden brown.
