Tender Turkey Meatballs and Sauce

Turkey is going to be on mega sales until Thanksgiving!  Get our there and grab a few pounds on your next shopping trip.

I just received 4 pounds of ground turkey in my last food bank bag.  I placed it in my freezer and will be on the look out for some satisfying turkey recipes in the future.  

Ingredients
1 egg 
1/2 cup seasoned bread crumbs
1/3 cup chopped onion
1/2 teaspoon pepper
1 teaspoon of garlic seasoning blend
1-1/2 pounds lean ground turkey
2 large cans of spaghetti sauce
​1 cup Frozen Vegetable Blend
16 oz. spaghetti


In a large bowl, combine the egg, bread crumbs, onion, pepper and seasoning blend. Crumble turkey over mixture and mix well. Shape into 1-in. balls; place on a rack coated with cooking spray in a shallow baking pan. Bake at 400° for 15 minutes or until no longer pink.

Meanwhile, in a 4- or 5-qt. slow cooker, combine the tomato sauce and vegetable blend. Stir in meatballs. Salt and pepper to taste. Cover and cook on low for 6 hours. Cook spaghetti according to package directions; serve with meatballs and sauce.

Fall Pumpkin Bread

Ah! The smell of crisp fall is upon us.  Nothing tantalizes taste buds more than delicious home made pumpkin bread baking.

So many canned pumpkin sales going on right now!  Grab one today or pull out that bag of frozen pumpkin you've kept from fresh ground and make this delicious treat. Then be sure to freeze a bag for easy pull out when someone needs a snack.  

1-2/3 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1 cup canned pumpkin
1/2 cup canola oil
1/2 cup water
1/2 cup chopped walnuts (optional)
1/2 cup raisins, (optional)


Preheat oven to 350°. Combine first eight ingredients. Whisk together eggs, pumpkin, oil and water; stir into dry ingredients just until moistened. Fold in walnuts and, if desired, raisins.

Pour into a greased 9x5-in. loaf pan. Bake until a toothpick inserted in center comes out clean, 65-70 minutes. Cool in pan 10 minutes before removing to a wire rack.

Hearty Chicken and Matzo Ball Soup

Here's a great thrifty recipe that you can use by latching onto some of the Rosh Hashanah sales going on lately. At Publix, Streit's Matzo Ball and Soup Mix are on sale 3 for $5.  All you need is some BOGO chicken quarters also noted in this weeks flyer.

Grab a few veggies, and you've got a meal ready in less than 45 minutes.  This is a favorite fall recipe in our house. 

1 box Matzo Ball and Soup Mix
2 Chicken Leg quarters
2-3 stalks celery, chopped
3-4 carrots, peeled and chopped
1 large onion, chopped
1 1/2 cups egg noodles

Prepare soup mix according to directions.  Place matzo mix in refrigerator.

In soup pot add chicken, celery, carrots, and onions.  Cook on low/medium for 30 minutes. Take out chicken quarters to cool.  Add noodles and drop 1-2 inch matzo balls in soup. Cook for 10-15 minutes more.  

Debone and skin chicken.  Place bitesize chunks back into pot when noodles and matzo are finished cooking.  Serve immediately.
