Five-Spice Pork Kabob

On a tight budget, dictating a meat day, pork is one cheap accessible component.  I am forever looking for meat sales, and one sure fire hit that will bless our freezer shelves is pork.  Whether it is in the form of steaks, chops, roasts, or ribs you can be sure of a one-of-a-kind bargain whenever you need to reshelf your meat supply.   In fact, pork is one of the cheaper meats that most can afford. 

But, one can eat only so much pork.  Then cries from other family members erupt, "Pork, again?"  I think this rhetorical statement is due to the fact we don't delve deep enough into our recipe books to find other economical ways to make pork tantalizes our taste buds.  Well, I've saved you the trouble today.  Here is a thrifty recipe that will bring cheers to your table when delivered.

2 tab. ketchup
1 tab. soy sauce
2 tsp, packed brown sugar
1 tsp. chinese five-spice powder
1 1/4 pd pork cut into kabob pieces
8 bamboo skewers
1/4 cup peanuts (optional)
1/4 cup cilantro springs (optional)

In a bowl combine first four ingredients.  Toss kabobs with mixture and let marinate 1/2 hour.  Thread kabobs through and grill or bake at 375 degrees for about 20 minutes.  Top with peanuts and cilantro if desired

Fall Apple Cake

The October winds are finally here in Florida and with it brings a cool sense of joy as the season of fall sets in.  Smells of cinnamon, nutmeg, and cloves come wafting from your kitchen enticing even the finicky of heart.  Thre is something about the goodness  in these spices that send the word of love throughout your home.  Here is a wonderful recipe made from my kitchen each fall.  This moist, tender delight will have you out at Aldi's buying those 3 lb bag of apples for only $1.69!

1 3/4 cup of sugar
6 oz. cream cheese
1/2 cup butter or margarine
1 tsp. vanilla
2 large eggs
1 1/2 cup flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. cinnamon
3 cups of peeled, chopped apples

Beat sugar, cream cheese, vanilla, and butter at high speed until fluffy.  Add eggs slowly and beat on low.  Add flour, baking powder, salt, and cinnamon and beat on medium for 5 minutes.  Fold in apples.  In a 9 inch pan, butter and flour the pan to prevent sticking.  Bake at 350 for about 1 hour or until cake pulls away from pan.

Tropical Cake

Have you ever wanted something  extremely  moist, yet light, that hits the spot for a dessert idea?  Here is a recipe that is reasonably cheap, and with any luck, you may find a few staples in your food banks bag.  I can tell you this, it won't last long in the refrigerator once it's made.  This deliciously different tropical cake will become a favorite request in your household.

1 package of yellow cake mix
1 cup oil
11 oz. of mandarin oranges, undrained
4 eggs

Frosting:
1 large package of vanilla pudding
1 large can crushed pineapple, undrained
8 oz. Cool Whip

Using your mixer on high, mix the first four ingredients for five minutes.   Then pour into two greased and floured 8" cake pans.  Bake at 325 degrees for 45 min.  Once layers are cool, mix pineapple and vanilla pudding.  Fold in Cool Whip.  Frost cake layers.  Delicious, and easy!

Macaroni Salad

Whatever happened to Sunday dinners?  This used to be a time when families designated a certain time each week for all to sit down and share each other's company.  A time when family members looked forward to special treats prepared that were unique and not offered during weekly meals.  Sunday dinners seem to be put to the curb side as we engage in the rat race of life latel  On a personal note, I've been trying to reinstate the Sunday dinner here at home by offering a new and different treat each week for my family to enjoy.  This macaroni salad is inexpensive and won't stretch that tight budget of yours.  It is simple and most ingredients can be attained in your cupboard.

1 box of your favorite macaroni
1/4 large Spanish onion chopped
1/2 cup mayonnaise (more if salad looks dry)
1 tsp. garlic powder
1 tab. parsley flakes
salt and pepper to taste
1/2 cup shredded sharp cheese
1/2 cup ham lunchmeat chopped
1/3 cup cucumber
1 celery stick chopped
1/2 cup peas, frozen or canned

Boil noodles according to directions.  Cool under running water.  Drain well.  Add all ingredients in a bowl and mix well.  Chill before serving.

Mississippi Mud Pie

Last week's dirt cups were amazing.  Equally amazing is the lawn decorations that bestow our front lawn in the Halloween spirit.  Nothing puts a smile on your face than pulling into your own driveway with a few haunted creatures greeting you. 

This week I've dug out my favorite Mississippi Mud Pie recipe.  This too eludes Halloween tradition and my kids look forward to it each year.  It's easy and inexpensive with ingredients you may have already found gathering in your cupboards.  I true traditional treat!

1 1/4 pound chocolate chip cookie crushed (save 4)
1/3 cup of margarine melted
1 small container of whipped topping
6 ozs. of chocolate chips ( about 1/2 bag)
1 can evaporated milk
1 container of vanilla ice cream

In a bowl combine crushed cookies and melted butter.  Press into 13 x 9 inch pan.  Place in freezer 1/2 hour to harden.  Slice vanilla ice cream into 1 inch slaps and place on bottom of pan.  Smooth with back of spoon.   Freeze again for 20 min.  In a pan add chocolate and milk.  Stir until thick and let cool completely.  Pour over vanilla ice cream layer and freeze 1/2 hour.  Smooth one tub of whipped topping over top.  Sprinkle with remaining crushed cookies.  Freeze until ready to serve.

Halloween Dirt Cups

Getting out those Halloween decorations this weekend?  How' bout a little after dinner treat tonight for those little ones to spark that festive mood?  This recipe is quick, easy and inexpensive.  Your kids will just love the flavors that mesh in this good 'ol favorite recipe.  Take a few moments this afternoon preparing a real treat while you organize, discard, and hang up those chilling decorations!

2 cups cold milk
1 package of Jell-O chocolate pudding, small
1 tub Cool Whip
1 16 oz. package of chocolate cookies, crushed
8 - 10 clear cups or dessert cups
Gummy worms, candy flowers, chopped peanuts, or other gummy treat

Pour milk in bowl with small box of pudding mix.  Whisk until blended.  Let mixture stand five minutes.  Stir in whipped topping and half the crushed cookies.  Place one tab. of reserved crushed cookies in each cup, fill cup 2/3 full with pudding mixture, and top with another 2 tab. of crushed cookies.  Decorate with gummies  and such.  Quick and YUM!

Homemade Eggnog

Alright, you may think I'm crazy sending out this recipe that should be saved for holiday fare, but hang with me here.  Did you ever have one of those weeks, that simply send you for a tailspin without recovery?  These days you want to come home on Friday evening,  put your feet up, and grab an unusual spirit.  On those days, the ordinary wine, mixed drink, or beer just won't do.  I'm sending out this recipe for the adventurous who want to buy the family a pizza that night and spend some time yourself in the kitchen preparing something that only you and your partner will totally enjoy.

So here it is. - The amazing Homemade Eggnog recipe.  And, trust me, this is the richest, creamiest treat you'll ever lay on your taste buds.  You'll forget about the week in only a couple of glasses, and settle down to an evening of enjoyment with those who truly matter in your life - your family.

12 egg yolks
1/2 pound sugar
1 quart light cream
1 750ml bottle of dark rum
1 quart of heavy cream
nutmeg

Beat 12 egg yolks with sugar until mixture is thick and pale yellow.  Stir in light cream and rum. Chill three hours.  Then whip heavy cream until stiff.  Pour rum mixture into heavy cream and begin to fold in gently.  Sprinkle with a bit of nutmeg.  Enjoy!
