Cheesy Ham Chowder

Fall is here!  Time to dust off those soup pots and bring on some wonderful, thirty dinner meals.

From time to time I receive a package of bacon in my food pantry bag.  This recipe will make a delicious dinner with only 10 strips.  


10 bacon strips, diced
1 large onion, chopped
1 cup diced carrots
3 tablespoons all-purpose flour
3 cups milk
1-1/2 cups water
2-1/2 cups cubed potatoes
1 can (15-1/4 ounces) whole kernel corn, drained
2 teaspoons chicken bouillon granules
Pepper to taste
3 cups (12 ounces) shredded cheddar cheese
2 cups cubed fully cooked ham

In a Dutch oven, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In the drippings, saute onion and carrots until tender. Stir in flour until blended. Gradually add milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened.

Add the potatoes, corn, bouillon and pepper. Reduce heat; simmer, uncovered, for 20 minutes or until potatoes are tender. Add cheese and ham; heat until cheese is melted. Stir in bacon.

Peanut Butter and Oreo Icebox Cake

What a slice of heaven this one is! Believe it or not, all of this can be switched out for store products instead of brand name.  

Then you have one sweet success! Thrifty and down right delicious!

1 (16 oz.) cool whip
1 1/2 cups peanut butter
3/4 cup fudge sauce
1 box of Oreos (store brand) divided
1/2 cup lightly chopped nuts

Line a 8 x 8 baking pan with aluminum foil. Spread 4 rows in a single layer at the bottom

In a bowl beat peanut butter and cool whip until combined. Spread 1/2 the mixture over the Oreo layer.

Top with another layer of Oreos and 1/2 of the fudge sauce.Add the rest of the peanut butter topping.  Top with another layer of Oreos.

Pour the rest of the fudge topping over the top and sprinkle with nuts.

​Freeze for 4 hours.

Deep Dish Apple Pie

Oh happy fall!  I just went picking at Winn Dixie who advertises apples for as little as $1 a pound this week.  

What a show stopper this one is.  Simple, economical to prepare, you'll be pleasantly surprised to add this to your supper fare this week.  

2 cups all-purpose flour
1/2 cup shortening
1 large egg
1/4 cup cold water
2 tablespoons white vinegar

FILLING:

10 cups sliced peeled tart apples (about 8 medium)
1 teaspoon lemon juice
1/4 cup sugar
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon butter
1 large egg
1 tablespoon milk

Place flour in a large bowl; cut in shortening until crumbly. In a small bowl, whisk egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough holds together when pressed. Shape into a rectangle; wrap in plastic wrap. Refrigerate 30 minutes or overnight.

Preheat oven to 375°. For filling, in a large bowl, toss apples with lemon juice. In a small bowl, combine sugars, flour, cinnamon and nutmeg; add to apple mixture and toss to coat. Transfer to a 13x9-in. baking dish; dot with butter.

On a lightly floured surface, roll dough to fit top of pie. Place over filling. Trim and flute edges. In a small bowl, whisk egg with milk; brush over pastry. Cut slits in top. Bake 40-50 minutes or until crust is golden brown and apples are tender. Cool on a wire rack.

Chicken with Chimichurri Sauce

Planning on doing some grilling for Labor Day? Need another main dish that's frugal and easy?Try this one!  It only takes two hours of marinating and approximately 15 minutes on the grill. 

4 cups water
3 tab. salt
1 tablespoon honey
1 teaspoon grated lemon peel
1 teaspoon grated orange peel
4 boneless skinless chicken breast halves (6 ounces each)

CHIMICHURRI SAUCE:
1/2 cup olive oil
1/4 cup packed fresh parsley sprigs
1 tablespoon minced fresh thyme
1 tablespoon lemon juice
1 tablespoon orange juice
1 garlic clove, peeled
1/4 teaspoon salt
1/8 teaspoon pepper


In a large bowl, whisk water, salt, honey and peels until salt is dissolved. Add chicken, making sure it's submerged. Refrigerate up to 2 hours.

Pulse sauce ingredients in a food processor until smooth. Reserve 1/2 cup sauce for serving.

Remove chicken; rinse and pat dry. Brush chicken with remaining sauce. Grill, covered, over medium-high heat until done. About 4-6 minutes on each side.

​Serve with reserved sauce.

Crock Pot Creamy Macaroni and Cheese

Here's a great one to try this holiday weekend especially if you're having some family outdoor fun.  

All you need to do is mix ingredients in crock pot, stir, and cook on low for 1 1/2 - 2 hours. When you return you'll have some of the creamiest macaroni and cheese ever!

Be sure to cook on the lowest crock pot setting to ensure macaroni comes out the best!

1lb (16oz) elbow macaroni
2 cups whole milk 
1 (12oz) can evaporated milk
½ tsp salt or more to taste
2 Tbsp butter
3 cups shredded sharp cheddar cheese

Add evaporated milk, milk, macaroni, salt, butter and cheese into a large slow cooker. Mix

well.Cook on the lowest setting for about 1½­ - 2 hours.
Cook until the pasta is al dente. Stir after 30 minutes and check the macaroni after 1 ¼ hours.
