Chicken with Lemon Pasta

Need a 30 minute quick fix tonight?  Try this one! With just a few ingredients, you've got a light, tasty, and refreshing meal!

4 boneless skinless chicken breast halves
1 teaspoo
n salt, divided
1/4 teaspoon plus 1/8 teaspoon pepper, divided
1/2 cup all-purpose flour
8 ounces uncooked angel hair pasta
3 tablespoons olive oil, divided
1/4 cup peeled and thinly sliced garlic cloves (about 12 cloves)
1 cup white wine or chicken broth
2 tablespoons lemon juice
1/2 cup grated Parmigiano-Reggiano cheese


Pound chicken breasts with a meat mallet to 1/4-in. thickness. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess.

Cook pasta according to package directions for al dente. Meanwhile, in a large skillet, heat 2 tablespoons oil over medium heat. Add chicken; cook 2-3 minutes on each side or until no longer pink. Remove and keep warm.

In same pan, heat remaining oil over medium heat; add garlic. Cook and stir 30-60 seconds or until garlic is lightly browned. Add wine to pan; increase heat to medium-high. Cook, stirring to loosen browned bits from pan, until liquid is reduced by half. Stir in lemon juice.
Drain pasta, reserving 1/2 cup pasta water; place in a large bowl. Add cheese, 1/3 cup parsley, half of the garlic mixture, and remaining salt and pepper; toss to combine, adding enough reserved pasta water to moisten pasta. Serve with chicken. Drizzle with remaining garlic mixture; sprinkle with remaining parsley.

Carrot Garden Dirt Ice Cream

Got a couple of hours to kill with the kids or grand kids?  This is an exceptional, thrifty piece of art to tackle then.  You can make it in minutes and the kids will have a blast.  


1 package (15-1/2 ounces) Oreo cookies
1-1/2 quarts vanilla ice cream
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup canned vanilla frosting
Orange paste food coloring
2 to 3 pieces pull-apart green apple licorice


Finely crush half of the cookies; crush the remaining cookies.

In a large bowl, beat ice cream, whipped topping and finely crushed cookies until blended. Spread into an 8-in. square dish; sprinkle with crushed cookies. Freeze until firm.

Tint frosting orange; pipe carrot tops in rows over dessert. Cut green apple licorice into 1-in. pieces; separate strands, leaving one end intact. Place on carrots to form stems.

Slow Cooker BBQ Pulled Chicken

I have legs again!  Another HUGE 10 lb. bag of frozen leg quarters.  But, who wants to use the oven this time of year?  How about a fantastic recipe that will offer a few leftovers for the upcoming dog days of summer?

Give this one a try.  It's amazing and super easy.

5-6 chicken legs
2 cloves sliced garlic
1 medium onion chopped
1 tsp. salt
1/2 tsp. pepper
1 bottle of favorite BBQ sauce
rolls

Place chicken in slow cooker.  Sprinkle next four ingredients over top.  Cook on high 6 hours.  Remove chicken and let cool.  Discard all but 1 cup of broth. 

Once cool, remove bones and skin from chicken and shred with two forks.  Place back in slow cooker. Begin adding your favorite BBQ sauce until you reach the desired coating. Some like more, some like less! Intermittently add a bit of broth if coating is too thick.  

Serve on your favorite bun with pickles, if desired.

Overnight Cherry Tomato Salad

The more recipes you can make on your down time to store for tomorrow's dinner, the more you can enjoy the days on the weekend.

Try this recipe which uses the tastes of summer to tantalize your family's taste buds.  This one is cool, refreshing, and thirty.


1 quart cherry tomatoes, halved
1/4 cup canola oil
3 tablespoons white vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup minced fresh parsley
1 to 2 teaspoons minced fresh basil
1 to 2 teaspoons minced fresh oregano

Place tomatoes in a shallow bowl. In a small bowl, whisk oil, vinegar, salt and sugar until blended; stir in herbs. Pour over tomatoes; gently toss to coat. Refrigerate, covered, overnight.

Overnight Layered Lettuce Salad

It's that time of  year when work parties begin bringing in summer fun.  If you need a dish to prepare that's economical give this one a try.

Best part of all is that you can prepare it the night before and just cover and tote it to work in the morning.  This is one of the most delicious, refreshing salads out there.

Check out Aldi and get the dried cranberries and real bacon bits for a little over a dollar.

1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
2 cups frozen peas (about 10 ounces)
1 cup mayonnaise
2 tablespoons sugar
1 cup (4 ounces) shredded cheddar cheese
1 small package of real bacon bits.
3/4 cup dried cranberries

In a 4-qt. or 13 x 9-in. glass dish, layer the first five ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover.

Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.
